Pasta Please!
This pasta salad is perfect to take to a BBQ or meal prep on a Sunday evening to eat for your lunches during the week! I love it because it’s made with protein noodles, and has so many different veggies to give it all the pretty colors.
Here’s what you need:
Box Chickpea or Red Lentil Pasta (I like the brand Banza)
1 package cherry tomatoes
1 medium zucchini
1 medium cucumber
1 bell pepper (any color, I like orange!)
1 can sliced kalamata olives
Feta cheese
Olive oil
Red wine vinegar
Seasonings such as: salt, pepper, smoked paprika, garlic powder, onion powder
Start by cooking your pasta according to box and once it’s done, drain and rinse in cold water. Meanwhile, chop all veggies in small cubes and drain your olives. In a large bowl, place pasta and drizzle a little olive oil. Toss to coat the noodles. Then add your veggies, and crumble feta cheese. Add ⅓ cup of red wine vinegar and season to your liking.
