Pumpkin Spice Up Your Life: Granola Edition
Fall is in full swing and you know what that means: pumpkin everything! This is a pumpkin spice granola recipe, but you can leave out the pumpkin/pumpkin pie spice if you prefer! Here is what you need:
2 cups old fashioned oats
1 cup chopped pecans
1 cup chopped cashews
¼ cup maple syrup
¼ cup melted coconut oil
¼ cup pumpkin puree
1.5 tsp. pumpkin pie spice
1 tsp. cinnamon
¼ tsp. vanilla extract
½ tsp. salt
½ cup shredded coconut
½ cup chocolate chips
Heat oven to 350. Spray sheet with cooking spray or line with parchment paper. Combine wet and dry ingredients and then pour wet ingredients over the dry oatmeal/pecan/cashew mixture. *Leave the coconut and chocolate chips out for now.
Spread on the sheet and bake for 15 minutes. Remove, add coconut and give the tray a good shake. Place back in the oven for 10-12 min - remove and let cool to room temperature then stir in chocolate chips! Place in a mason jar or any container.
This is great for a snack or a topping on your yogurt! Enjoy!!
